Misonikomi udon

My Favorite food is misonikomi udon. It was born in Nagoya. People in Nagoya like miso, so they put it into various dishes. Misonikomi udon is the typical example. Aka miso is popular in Aichi. Especially, hattyo miso (a kind of aka miso) is unique to this area. Misonikomi udon is cooked with hattyo miso, so it looks black. Many people think aka miso is very salty but it is actually not. It is said that aka miso has rich flavor. I think so and hattyo miso is more flavorful! Hattyo miso soup match udon very much. Try to eat it when you visit Nagoya.
