On December 31th, my father makes buckwheat noodles (soba) eaten on New Year's Eve. I helped him to make soba. I tell you how to make "soba" .
First, add some water to buckwheat flour which was calculated and knead it thoroughly.
After enough kneading, extend the dough of soba with a rolling pin.

Then, fold the dough into two or three and cut it thinly.
